Formulation of Bakestable Paste 2018

Method:
1st Step (Mixing):
  • Mixing of all dry ingredients in Sigma Mixer, add 1/3 quantity of fat into it
2nd Step (Refining):
  • Pass it through refiner for twice
3rd Step (Conching):
  • Add remaining fat into the concher. (Coco mass need to mix with fat)
  • Slowly add refined material
  • Add Soya Lecithin towards the end of the conching stage
  • Add flavor at the end of the process & packed in drums
4th Step (Choco filled in cookies):
  • Use this paste for choco filled cookies. (As per following cookies recipe)

Cookies Recipe for Bake stable Centre filling chocopaste

Ingredients:

SMP 5.0
K lite 135.0
Sugar Powder 100.0
Soy Lecithin 0.2
Liquid Glucose 10.0
Baking Powder 1.0
Water 15.0
Flavor 0.30
Total 466.50
Method:
  1. Melt liquid glucose into the water
  2. Creaming the fat with powder sugar & further add lecithin & flavor.
  3. Mix it uniformly; add liquid glucose with water into it.
  4. Mix flour, SMP, Baking Powder together uniformly & add it to the above mixture.
  5. Mix gently & weigh uniform quantity of batter, pour the Choco paste into it & close It properly
  6. Note: Ratio of Dough and paste is 60 : 40 or 70 : 30 as per requirement.
Time & Temperature:
  • Baking at 1400 - 1600 C for 15-20 min.
